Guacamole Deviled Eggs
Ingredients
6 large eggs
1 ripe avocado (if they are hard, they are not ripe)
2 tablespoons lime juice
1 clove garlic, minced
¼ teaspoon cumin
Salt and pepper, to taste
Chopped cilantro, for garnish
Sliced jalapeños (optional, for garnish)
Instructions
Boil the Eggs: Place eggs in a saucepan and cover them with water. Bring the water to a boil over medium heat. Once boiling, cover the pan and remove it from heat. Let the eggs sit for 12 minutes.
Cool and Peel: After 12 minutes, transfer the eggs to an ice bath or place them under cold running water until cool. Once cooled, carefully peel the eggs and set them aside.
Prepare the Filling: Slice the peeled eggs in half lengthwise. Remove the yolks and place them in a bowl. Add the avocado, lime juice, minced garlic, cumin, salt, and pepper to the yolks. Mash together until smooth and creamy.
Fill the Eggs: Using a spoon or piping bag, fill the egg white halves with the guacamole mixture.
Garnish: Sprinkle with chopped cilantro and, if desired, top with sliced jalapeños for an added kick.
Serve: Arrange on a platter and serve immediately, or refrigerate until ready to serve.
NOTE: Use only ripe avocados, avocados with some give when you press them gently. If they are hard, they aren't ripe and not only will they not taste good, you won't be able to easily mash them.
Note that if they are too ripe (too much give when you press them), they may be bruised and also won't taste good.
