Cheesy Mashed Cauliflower
It's surprising how a simple change in the way you bake, broil, grate or chop a vegetable takes on a whole new personality, taste and texture. We've had cauliflower simply steamed with butter and seasonings. However, there's a surprising difference that's quite yummy when it's whipped like mashed potatoes. Make this tonight, it's so easy. Children will love it also.
Creamy Mashed Cauliflower
Ingredients
1 head of cauliflower (about 2 lbs)
1/2 cup parmesan cheese, divided
2 tablespoons butter
1 clove crushed garlic (optional)
1/3 cup of heavy cream or half-and-half
Salt, to taste
Pepper, to taste
1/2 tsp dried or fresh parsley
Instructions
Wash the cauliflower and remove the green leaves. Break it into floret pieces.
Steam the cauliflower until tender, approximately 7-10 minutes.
Mash the cauliflower to your desired consistency.
Stir in 1/2 cup of cheese, cream, butter, and garlic.
Sprinkle with the remaining cheese.
Add salt and pepper to taste, and garnish with parsley.
Serve hot.
