It's surprising how a simple change in the way you bake, broil, grate or chop a vegetable takes on a whole new personality, taste and texture. We've had cauliflower simply steamed with butter and seasonings. However,  there's a surprising difference that's quite yummy when it's whipped like mashed potatoes. Make this tonight, it's so easy. Children will love it also.

Creamy Mashed Cauliflower

Ingredients

  • 1 head of cauliflower (about 2 lbs)

  • 1/2 cup parmesan cheese, divided

  • 2 tablespoons butter

  • 1 clove crushed garlic (optional)

  • 1/3 cup of heavy cream or half-and-half

  • Salt, to taste

  • Pepper, to taste

  • 1/2 tsp dried or fresh parsley

Instructions

  1. Wash the cauliflower and remove the green leaves. Break it into floret pieces.

  2. Steam the cauliflower until tender, approximately 7-10 minutes.

  3. Mash the cauliflower to your desired consistency.

  4. Stir in 1/2 cup of cheese, cream, butter, and garlic.

  5. Sprinkle with the remaining cheese.

  6. Add salt and pepper to taste, and garnish with parsley.

  7. Serve hot.
