Garlic avocado toast
The key to this delicious recipe is freshly rubbed garlic on the bread.
INGREDIENTS:
1 ripe avocado, halved, pitted and peeled
Pink Himalayan salt or a nice sea salt of your choice
Freshly ground black pepper
4 slices whole grain or whole wheat bread
1 clove garlic, peeled and halved (optional)
2 tablespoons extra-virgin olive oil or unsalted butter, softened
Juice of 1 fresh squeezed lemon
Red pepper flakes (optional)
Sprig of parsley or cilantro (optional)
DIRECTIONS:
Mash the avocado with a fork in a shallow bowl until smooth and slightly chunky. Season with salt and black pepper and a squeeze of fresh lemon juice to taste. Mix well.
Toast the bread until browned and crisp. Lightly rub one side of each slice with the cut side of the garlic until fragrant; discard the garlic afterward. Lightly brush the toasts with olive oil or butter.
Divide the mashed avocado evenly among the toasts and top with red pepper flakes and parsley or cilantro if using. Enjoy your avocado toast!
