Chocolate Chip Cookies
Ingredients:
1 cup butter (softened)
1 cup raw sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups Whole Wheat White Flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon Pink Himalayan salt (fine)
1 1/2 cups semisweet chocolate chips
1 cup chopped pumpkin seeds or sunflower seeds (optional)
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
In a large mixing bowl, cream together the softened butter, raw sugar, and brown sugar until smooth.
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then stir in the vanilla extract.
Dissolve the baking soda in the hot water. Add this mixture to the batter along with the fine Pink Himalayan salt.
Gradually stir in the Whole Wheat White Flour until just combined.
Fold in the semisweet chocolate chips and the optional chopped pumpkin or sunflower seeds if using.
Line a cookie sheet with parchment paper.
Drop spoonfuls of dough onto the prepared cookie sheet, spacing them apart.
Bake in the preheated oven for approximately 9 minutes, or until the edges are nicely browned.
Allow the cookies to cool on the cookie sheet. This will help keep them soft in the center as they set.
For an optional finishing touch, lightly sprinkle the cookies with flake salt before serving.
