Easy Navy Bean Soup Recipe
Ingredients
3 cups cooked navy beans
1- stalk of celery diced
1/2 small onion diced about
4 cloves of Garlic
1 cup tomato sauce
3 cups vegetable broth (extra if needed to add more broth)
3/4 stick butter
3 tablespoons of freshed minced parsely (optional)
1/2 red or green bell pepper chopped (optional)
1 teaspoon dried basil
Salt and pepper to taste
Cayenne pepper to taste (optional)
Sour cream (optional)
Instructions
Melt half of the butter in a soup pot over medium heat.
Add the celery, carlic, onion, and parsley (if using), along with the salt, dried Basil, Cayenne Pepper, and Turmeric (if using). Sauté until the vegetables are translucent.
Incorporate the cooked beans and pour in the vegetable broth and tomato sauce and stir to combine.
Reduce heat to low to medium, cover, and simmer for 15-20 minutes, stirring occasionally.
Serve warm, with a dollop of Sour Cream if desired. Adjust seasoning with additional salt or pepper to taste.
