Roasted Red Potatoes with Rosemary & Garlic

Ingredients:

  • Small Red Potatoes (roughly 2-3 per person)

  • Olive Oil

  • Salt

  • Rosemary (fresh or dried)

  • Fresh crushed garlic about 3-4 cloves

Instructions:

  1. Preheat the Oven: Set your oven to 425 degrees Fahrenheit.

  2. Prepare the Potatoes: Rinse the small red potatoes under cold water and pat them dry with a clean towel.

  3. Slice the Potatoes: Cut the potatoes into slices about 1/2 inch thick.

  4. Coat the Potatoes: In a large bowl, toss the sliced potatoes with olive oil and garlic until evenly coated. Sprinkle with salt and rosemary, mixing well to ensure all slices are seasoned.

  5. Bake: Spread the potatoes in a single layer on a baking sheet. Bake in the preheated oven until they are golden brown and tender, approximately 25-30 minutes.

  6. Serve: Remove from the oven and serve warm. Optional: offer sour cream on the side for dipping.
