Brown sugar summer squash
Summer squash is known for its mild taste and versatility. This recipe combines it with brown sugar to bring out its natural sweetness. This unexpected combination transforms a simple vegetable into a delicious side dish. Ideal for summer gatherings or as a special touch to any meal.
Ingredients
2-3 yellow summer squash (enough for 2 cups)
2 small onions (or one medium)
2 tablespoons unsalted butter
1/8 teaspoon salt (less or more to taste)
1 pinch of pepper
1 tablespoon of raw or brown sugar
Directions
Cut the squash into 1/2 inch rounds. Cut the onions into similar sized pieces.
Add the butter to a wide saucepan with a lid and heat over medium heat. Once the butter has melted, add the onions and cook until translucent, about 4 minutes.
Add the squash, salt, pepper, and brown sugar. Stir to combine, then cover.
Cook for about 10 minutes, until the squash is soft. Remove the lid and continue cooking for about 5 minutes to allow some of the liquid to evaporate. The remaining liquid should be thicker than water, resembling a glaze.
Adjust seasoning with more salt and pepper if needed, and serve immediately.
