Chunky Tomato Sauce

Tomatoes from a summer garden are plump, juicy, and vibrant in color, ranging from deep reds to sunny yellows and rich greens. These fresh, sun-ripened fruits are firm yet tender, with a slightly sweet flavor and a hint of acidity, making them ideal for a flavorful tomato sauce. Their natural sweetness creates a robust sauce perfect for soups, pasta and more.

Simple Tomato Sauce Recipe

Ingredients

  • 2 pounds fresh garden tomatoes

  • 2 tablespoons olive oil

  • 3 cloves garlic, crushed

  • 1 small onion, diced

  • 1 Bell pepper diced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon sugar (optional, to balance acidity)

  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Prepare the Tomatoes:

    • Core and chop the tomatoes into small pieces. If you prefer a smoother sauce, you can peel the tomatoes by blanching them in boiling water for 1 minute, then transferring them to an ice bath and removing the skins.

  2. Cook the Aromatics:

    • In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion, peppers and sauté until tender, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently, until fragrant.

  3. Add Tomatoes:

    • Stir the chopped tomatoes into the skillet. Season with salt, black pepper, and sugar (if using). Bring the mixture to a simmer.

  4. Simmer the Sauce:

    • Reduce the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally. The sauce will thicken and the flavors will meld.

  5. Adjust Seasoning:

    • Taste the sauce and adjust the seasoning if necessary.

Store any leftover sauce in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
