Simple Tomato Sauce Recipe
Ingredients
2 pounds fresh garden tomatoes
2 tablespoons olive oil
3 cloves garlic, crushed
1 small onion, diced
1 Bell pepper diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon sugar (optional, to balance acidity)
Fresh basil leaves (optional, for garnish)
Instructions
Prepare the Tomatoes:
Core and chop the tomatoes into small pieces. If you prefer a smoother sauce, you can peel the tomatoes by blanching them in boiling water for 1 minute, then transferring them to an ice bath and removing the skins.
Cook the Aromatics:
In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion, peppers and sauté until tender, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently, until fragrant.
Add Tomatoes:
Stir the chopped tomatoes into the skillet. Season with salt, black pepper, and sugar (if using). Bring the mixture to a simmer.
Simmer the Sauce:
Reduce the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally. The sauce will thicken and the flavors will meld.
Adjust Seasoning:
Taste the sauce and adjust the seasoning if necessary.
Store any leftover sauce in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
