Banana bread

Ingredients
1/2 cup butter
1 cup brown sugar
2 eggs, beaten
4 very ripe bananas (3 mashed, 1 for garnish)
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
1/4 teaspoon cinnamon (optional)
Directions
Preheat the oven to 350ºF (175ºC).
In a mixing bowl, cream together the butter and brown sugar until smooth.
Add the beaten eggs and the 3 mashed bananas to the mixture, combining well.
Thinly slice the remaining banana and set aside for garnish.
In a separate bowl, sift together the all-purpose flour, whole wheat flour, baking soda, and salt.
Gradually add the dry mixture to the creamed mixture, mixing just until combined. Avoid overmixing.
Pour the batter into a greased and floured loaf pan.
Lay the slices of the remaining banana on top of the batter for garnish.
Bake in the preheated oven for 22 minutes. Then, reduce the heat to 275ºF (135ºC) and bake for an additional 35 minutes.
Once baked, transfer the pan to a wire rack and allow to cool in the pan for 10 minutes. Then turn the loaf out onto the rack to cool completely.
