How to make bagels

Ingredients
4 cups bread flour
1 tablespoon granulated sugar
1 tablespoon salt
1 teaspoon instant yeast
1 1/2 cups warm water (110°F)
1 tablespoon barley malt syrup (optional for boiling)
Toppings (sesame seeds, poppy seeds, etc.)
Instructions
Prepare the Dough:
In a large mixing bowl, combine the bread flour, sugar, salt, and instant yeast.
Gradually add the warm water and mix until a rough dough forms.
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
First Rise:
Place the kneaded dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap or a damp cloth.
Let it rise in a warm place for about 1 to 1.5 hours or until doubled in size.
Shape the Bagels:
Punch down the risen dough and divide it into 8 equal pieces.
Shape each piece into a ball, then use your thumb to poke a hole through the center. Gently stretch the hole to about 2 inches in diameter.
Second Rise:
Place shaped bagels on a parchment-lined baking sheet. Cover and let rise for 30 minutes.
